Isn't she just the best Mum! She goes above and beyond what's asked of her. I love her so much.
Free-form Fruit Galette
175g flour
80g butter
cold water
1 egg
2 tbsp semolina
about 700g prepared fruit, ie preserved, tinned or fresh
sugar, approx 1/3 cup to sweeten fruit
icing sugar to dust
For the pastry crust combine the flour & butter to crumb stage, then add water to make smooth dough. Rest in the fridge for 20 mins (the dough not you dummy!)
Preheat the oven to medium heat. Roll pastry and place on lightly greased baking sheet (I used my pizza stone). Separate the egg white and yolk painting middle of pastry with yolk to seal it. Then sprinkle pastry with semolina (I didn't have any so used custard powder, seemed to do the trick).
Pile fruit into centre of pastry leaving a border of a couple of cm's to fold over. Sprinkle sugar on fruit then fold pastry edges over. Brush pastry with beaten egg white and sprinkle with sugar. Bake for 35 mins or until golden. Dust with icing sugar and serve with cream or ice cream or both!!!!
Frozen berries make it look pretty, I used tinned apple and doubled the mixture to create my masterpiece. What would you use?

Oh my goodness my mouth is watering. I cant decide what I would use as a filling but I bet anyfruit would be smashing. Can you make this next pizza night???
